In this week’s Straight To The Source’s column for ClubTIC, Tawnya and Lucy highlight a new snap-frozen falafel now available for foodservice created by Sydney chef, Kade Cohen.
There’s no question about it, we love working with chefs and producers who are developing new, innovative products, so when thinking about this week’s article, and clubs in particular, we are excited to bring attention to MadeByKade, a Sydney-based business founded by chef Kade Cohen, which launched late last year.
Inspiration for MadeByKade came to Cohen when he was working as a chef.
“I noticed two choices when wanting to serve falafel on the menu,” he recalls. “Make them yourself – this takes time and is a bit of a pain, especially if you want to do it well – or buy them. There’s no shortage of other falafel brands out there. Unfortunately, a majority are all pre-cooked.
As a consequence, Cohen spent a considerable amount of time researching and developing a falafel that could be baked or fried straight from the freezer.
“We’ve tried to create the best possible product with an emphasis on taste, customer experience and cooking experience,” he says. “Our falafel are gluten-free, vegan friendly and preservative-free. So dietary requirements are a breeze.”
In addition, it was important for Cohen that MadeByKade offered real flavour and value.
“Ours are packed with fresh herbs. That’s precisely why they are so green,” he says.
As Cohen sees it, MadeByKade’s point of difference for foodservice is that the product range combines convenience and quality.
“They are uncooked and snap-frozen, meaning you cook it from frozen for the first time. This means your customers experience a crispy, freshly-cooked falafel that tastes like it’s made in-house, minus all the chef’s labour that goes with it.”
